I gave up on two books this week. So we’re going to talk about cookies instead.

I recently flew to Utah. I wanted some Utah food. What they do best there is commercialize the homemade food I grew up on. I’ve had sub sandwiches on fry bread. I’ve heard about Sodalicious, the soda and cookie chain that some people cannot get enough of.

I had my eye on a little sandwich and cookie shop in Davis County. I planned to completely ignore the cookies. Until I saw this one:


I love me a BYU mint brownie. It appears to have spawned a cousin, a very delicious cousin.

I vowed to go home and figure out how make this cookie.

While hunting for through my files for just the right chocolate cookie to support all that frosting, I found that I had already captured the recipe for Brownie Mint Cookies. It’s author, a mother of five, says she got it from a local sandwich and cookie shop. If that doesn’t sound like a Davis County woman, I don’t know what does.

So here’s our version. Next time, we need to cut the chocolate frosting in half. There was plenty  to cover both the cookies, as well the faces of our pint-sized helpers.
